People following the celiac diet should not eat any foods that contain wheat, rye and barley. Although, they are free and even suggested to eat corn, rice, potato, soybeans, tapoica, carob, arrowroot, millet, buckwheat, quinoa and buckwheat. Another suggested food ingredient is distilled white vinegar, since it does not contain any gluten. However, Malt vinegar contains gluten.
They should also not eat Hydrolyzed vegetable protein, unless it is made from corn or soy. Any vegetable protein, unless it is made from soy or corn. Any malt or malt flavoring unless it is derived from corn. Also, they should be vary of vegtable gum, unless they are carob bean gum,. Locust bean gum, cellulose gum, guar gum, gum aracia, gum tragacanth, vegetable starch or xanthan gum.
