There are a large number of people that gluten intolerant.
As bread (which typically contains gluten) comprises a significant part of many peoples diets, there is really a need to have in place some excellent gluten free equivalents and alternatives for those who suffer gluten intolerance.
It is possible to bake gluten free bread, without flour. There are actually a number of products on the market that offer gluten-free bread and bread-like alternatives. However, for various reasons, commercial products may not be the best option for your needs. Commercially produced gluten free bread may not always be available locally and often can be very expensively priced. For many people, creating gluten free bread at home is a great solution.
The following gluten free bread recipe is great for coeliacs (celiacs) and is simple to make at home in your BreadMaker.
This below gluten free bread recipe will make either a 1kg multi-grain loaf of gluten free bread, or alternatively makes an excellent white bread if you choose to leave out the grains ingredients.
Ingredients:
1 and 3/4 cups white or brown rice flour
1/2 cup maize meal
1/4 cup glutinous rice flour
1 tablespoons caster sugar
1 teaspoon yeast (Fermipan)
370ml water and 3 tbs milkpowder, or lactose free milk
3 x 60g eggs beaten (room temperature or warmer)
1/2 cup soy flour
1/4 cup tapioca starch
3 teaspons xanthan gum
1 teaspoons salt
3 tablespoons light olive oil
1 tespoon vinegar
Grain Ingredients
1 handful sesame seeds
1 handful raw linseed
1 handful poppy seeds
Method:
1) Mix Dry ingredients together.
2) Warm Milk and mix with all other Wet ingredients.
3) Next Mix both the Wet and Dry ingredients together and place in pan of Breadmaker.
4) Bake on Basic setting in your Breadmaker until bread rises and baking complete.
The final loaf is quite heavy and keeps well. This gluten free bread recipe has much more taste than your typical store purchased gluten free white bread. For a slightly softer loaf of bread try using margarine instead of oil.
